Bringing a burst of sunny coastal flavor to your morning, these Mediterranean Baked Feta Eggs are the ultimate vibrant and healthy breakfast. This dish features perfectly poached eggs nestled in a rich, savory base of jammy cherry tomatoes, wilted spinach, and creamy, melted feta cheese.

Ingredients

  • 4 Large eggs
  • 1 cup Feta cheese crumbled
  • 2 cups Cherry tomatoes
  • 2 cups Fresh baby spinach
  • 2 cloves Garlic minced
  • 2 tbsp Extra virgin olive oil
  • ½ tsp Dried oregano
  • ¼ tsp Red pepper flakes optional
  • Fresh chives or parsley for garnish
  • Salt and black pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C).
  • In four individual ramekins (or one large baking dish), combine cherry tomatoes, crumbled feta, minced garlic, and olive oil.
  • Bake for 10–12 minutes until the tomatoes burst and the feta is soft.
  • Remove from the oven and carefully stir in the fresh spinach and dried oregano until the spinach is slightly wilted.
  • Create a well in each ramekin and crack an egg into each one. Season the top of each egg with salt and pepper.
  • Bake for an additional 8–10 minutes, or until the egg whites are just set but the yolks are still runny.
  • Garnish with fresh herbs and red pepper flakes. Serve immediately with crusty bread for dipping.
