When dinner needs to be both healthy and effortless, this Sheet Pan Mediterranean Chicken & Zucchini is my absolute favorite solution. The aroma of roasted garlic, lemon, and oregano wafting from the oven is enough to make any house feel like a home.

Ingredients

  • 1.5 lbs Boneless skinless chicken breasts cubed
  • 2 medium Zucchini sliced into ½-inch rounds
  • 1 cup Cherry tomatoes halved
  • 3 tbsp Extra virgin olive oil
  • 1.5 tsp Dried Italian seasoning
  • 1 tsp Garlic powder
  • 1 cup Shredded mozzarella cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper.
  • In a large bowl, toss the chicken, zucchini, and cherry tomatoes with olive oil, Italian seasoning, garlic powder, salt, and pepper until well coated.
  • Spread the mixture in a single, even layer onto the prepared sheet pan.
  • Bake for 18–20 minutes, or until the chicken is cooked through and the vegetables are tender.
  • Remove the pan from the oven and sprinkle the shredded mozzarella evenly over the chicken and vegetables.
  • Return to the oven for an additional 3–5 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley and serve immediately.
