This Easy Spicy Salmon Sushi Bake is the ultimate deconstructed sushi experience that has taken the internet by storm for a reason. It features a base of seasoned, vinegared rice topped with a creamy, succulent layer of baked salmon that is infused with the perfect amount of sriracha heat.

Ingredients

  • 1 lb Salmon fillet cooked and flaked
  • 3 cups Sushi rice cooked
  • ¼ cup Rice vinegar
  • 1 tbsp Granulated sugar
  • ½ tsp Salt
  • ½ cup Kewpie mayonnaise plus extra for drizzling
  • 2 tbsp Sriracha adjust to taste
  • 2 oz Cream cheese softened
  • ¼ cup Furikake seasoning
  • Garnish: Green onions sliced cucumber, unagi sauce, and roasted seaweed (nori) sheets

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, whisk together rice vinegar, sugar, and salt. Fold this into the warm, cooked sushi rice.
  • Press the seasoned rice into the bottom of a 9x13 inch baking dish. Sprinkle half of the furikake over the rice.
  • In a medium bowl, mix the flaked salmon, mayo, sriracha, and softened cream cheese until well combined.
  • Spread the salmon mixture evenly over the rice layer.
  • Bake for 15–18 minutes, or until the top is heated through and slightly golden.
  • Remove from the oven and drizzle with extra mayo and unagi sauce. Sprinkle with the remaining furikake and green onions.
  • Serve warm with nori sheets and sliced cucumber on the side for wrapping.
