This Tater Tot Casserole is a staple in my home because it hits every high note of a perfect weeknight dinner: it’s hearty, family-friendly, and incredibly simple to pull together. When it’s baking, the smell of browning beef and savory spices fills the kitchen, signaling a meal that everyone—from toddlers to adults—will actually be excited to eat.

Ingredients

  • 1.5 lbs Ground beef
  • 1 bag 32 oz Frozen tater tots
  • 1 can 10.5 oz Cream of mushroom soup
  • 2 cups Sharp cheddar cheese shredded
  • 1 small Yellow onion diced
  • 1 cup Frozen peas or mixed vegetables
  • 1 tsp Garlic powder
  • ½ tsp Salt
  • ½ tsp Black pepper
  • Fresh parsley for garnish

Instructions

  • Brown: In a large skillet over medium-high heat, brown the ground beef with the diced onion until no pink remains. Drain excess grease.
  • Season: Stir in the garlic powder, salt, pepper, frozen peas, and the can of cream of mushroom soup. Mix until well combined and heated through.
  • Layer: If using an oven-safe skillet, leave the mixture there. Otherwise, transfer to a 9x13 inch baking dish.
  • Cheese: Sprinkle the shredded cheddar cheese evenly over the meat mixture.
  • Arrange: Top the cheese with a single, even layer of frozen tater tots.
  • Bake: Bake at 400°F for 30–35 minutes, or until the tater tots are golden brown and the edges of the casserole are bubbling.
  • Finish: Garnish with fresh parsley and serve hot.
