Honey Roasted Sweet Potatoes

Ingredients

  • 2 large sweet potatoes sliced into ½-inch rounds
  • 3 tbsp unsalted butter melted
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves
  • ½ cup chopped walnuts toasted
  • ½ tsp salt or to taste

Instructions

  • Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together melted butter, honey, salt, and half the thyme.
  • Toss sweet potato rounds in the mixture until well-coated.
  • Arrange in a single layer on the baking sheet.
  • Roast for 25–30 minutes, flipping once, until tender and caramelized.
  • Toss with toasted walnuts and remaining thyme before serving warm.
