large sweet potatoes
sliced into ½-inch rounds

tbsp
unsalted butter
melted
2
tbsp
honey
1
tbsp
fresh thyme leaves

cup
chopped walnuts
toasted

salt

Instructions
Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
In a large bowl, whisk together melted butter, honey, salt, and half the thyme.
Toss sweet potato rounds in the mixture until well-coated.
Arrange in a single layer on the baking sheet.
Roast for 25–30 minutes, flipping once, until tender and caramelized.
Toss with toasted walnuts and remaining thyme before serving warm.
