This recipe is a beautiful fusion of tradition and convenience, offering a creamy, pudding-like texture that truly tastes like Kulfi ice cream in a bowl.

Ingredients

  • ½ cup old fashioned rolled oats
  • 1 cup unsweetened cashew or oat milk
  • 1 tbsp chia seeds
  • ½ tsp ground cardamom
  • A generous pinch of saffron threads about 6-8 strands
  • 1 tbsp maple syrup or jaggery
  • 1 tbsp crushed pistachios for garnish
  • Pinch of salt

Instructions

  • Place saffron threads in a small bowl with 1 tablespoon of warm milk and let sit for 5 minutes to bloom.
  • In a mason jar, combine oats, chia seeds, ground cardamom, and salt.
  • Pour in the remaining milk, the saffron-infused milk, and the sweetener.
  • Stir well until all ingredients are thoroughly combined.
  • Cover and refrigerate for at least 6 hours, or overnight.
  • Before serving, stir once more and top with crushed pistachios and extra saffron strands if desired.
