Ingredients

For the Salad

  • 1 head iceberg lettuce chopped
  • ½ red onion finely chopped
  • 4 –5 hard-boiled eggs chopped
  • 5 sweet peppers diced (use a variety of colors)
  • 2 12 oz bags frozen peas, thawed
  • cups aged Irish cheese shredded or diced

For the Dressing

  • ¾ cup mayonnaise
  • ½ cup sweet relish
  • 1 tablespoon spicy mustard
  • 1 teaspoon dried thyme
  • 2 teaspoons salt

Instructions

Make the Dressing

  • In a small bowl, whisk together mayonnaise, sweet relish, spicy mustard, dried thyme, and salt until smooth.
  • Set aside or refrigerate until ready to use.

Assemble the Layers

    In a large glass bowl or trifle dish, layer the salad ingredients in this order:

    • Chopped iceberg lettuce
    • Finely chopped red onion
    • Chopped hard-boiled eggs
    • Diced sweet peppers
    • Thawed peas
    • Shredded or diced aged Irish cheese

    Add the Dressing

    • Gently spoon or pour the dressing over the top of the salad.
    • Spread it out evenly to cover the top layer.

    Serve

    • Do not toss until you're ready to serve. This keeps the layers clean and beautiful.
    • Refrigerate until serving time.
