Ingredients

Instructions

  • Marinate the Chicken:
  • In a medium bowl, mix olive oil, oregano, garlic powder, salt, and pepper. Add chicken thighs and toss to coat evenly. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator for deeper flavor).
  • Cook the Chicken:
  • Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 5–7 minutes per side, or until golden brown and fully cooked (internal temperature 165°F / 75°C). Remove from heat and let rest for a few minutes, then slice into strips.
  • Prepare the Feta Tzatziki:
  • In a bowl, combine Greek yogurt, feta cheese, lemon juice, minced garlic, salt, and pepper. Stir until smooth and creamy. Adjust seasoning to taste.
  • Assemble the Gyros:
  • Warm pita breads and spread a generous layer of tzatziki down the center. Add sliced chicken, cherry tomatoes, cucumber, and red onion. Sprinkle with parsley, roll, and serve immediately.
