This oven-baked Monterey Sausage Pie combines sausage, veggies, and cheese in a fluffy Bisquick crust. Perfect for dinner or brunch!

Ingredients

  • 1 pound sausage pork or turkey
  • 1 cup diced red bell pepper
  • 1 sweet onion diced (Walla Walla or Vidalia recommended)
  • ½ cup diced mushrooms white or cremini
  • 3 teaspoons minced garlic
  • 1⅓ cups milk
  • 3 large eggs
  • ¾ cup Bisquick or other baking mix
  • ¾ teaspoon dried sage
  • ¼ teaspoon black pepper
  • cups Monterey Jack cheese grated (divided)

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C). Grease a deep-dish pie plate and set aside.

Step 2: Cook the Sausage Mixture

  • In a large skillet, brown the sausage over medium heat until fully cooked.
  • Add diced red pepper, onion, mushrooms, and garlic.
  • Sauté until vegetables are soft and fragrant, about 5–7 minutes.

Step 3: Prepare the Batter

  • In a mixing bowl, whisk together milk, eggs, Bisquick, sage, and pepper until smooth.

Step 4: Combine with Cheese

  • Stir 2 cups of the grated Monterey Jack cheese into the sausage and veggie mixture.
  • Reserve the remaining ½ cup of cheese for topping.

Step 5: Assemble the Pie

  • Pour the sausage mixture into the greased pie plate.
  • Pour the batter evenly over the top.

Step 6: Bake

  • Bake uncovered for 20 to 25 minutes or until golden and set in the center.
  • Sprinkle the remaining ½ cup of cheese over the top.
  • Return to the oven for 1–2 more minutes, just until the cheese is melted.

Step 7: Cool and Serve

  • Let the pie rest for 5–10 minutes before slicing. Serve warm with a crisp salad or roasted veggies.
