A creamy, comforting rice pudding made with almond milk and stevia. Naturally sweet, dairy-free, and perfect for dessert or breakfast.

Ingredients

  • 1 cup short grain brown rice
  • 3 cups Almond Breeze Original Almondmilk
  • 2 tablespoons stevia or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon sea salt

Instructions

Step 1: Combine the Ingredients

  • In a medium-sized pot, add the brown rice, almond milk, stevia, cinnamon, vanilla, and sea salt.

Step 2: Bring to a Boil

  • Place the pot over medium-high heat and bring the mixture to a gentle boil, stirring occasionally.

Step 3: Simmer Slowly

  • Once boiling, reduce the heat to low and cover. Simmer gently for about 70 minutes, or until the rice is tender and the milk has been mostly absorbed. Stir occasionally to prevent sticking.

Step 4: Serve & Enjoy

  • Remove from the heat and serve warm for a cozy treat—or refrigerate and enjoy it chilled later. Add a splash more almond milk before serving if needed to loosen the texture.
