Ingredients

  • 3 large bananas or 4 small bananas, overripe
  • ½ cup unsalted butter melted
  • cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

Step 1: Prep the Oven and Pan

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Mash the Bananas

  • In a large mixing bowl, mash the bananas using a fork or a potato masher until mostly smooth. A few small lumps are okay — they add texture!

Step 3: Add the Wet Ingredients

  • To the mashed bananas, add the melted butter, sugar, eggs, and vanilla extract. Whisk everything together until well combined.

Step 4: Fold in the Dry Ingredients

  • Add the flour, baking soda, baking powder, cinnamon, and salt directly into the same bowl. Using a spatula, fold the dry ingredients into the wet mixture just until combined. Don’t overmix — this keeps your bread tender.

Step 5: Bake
