Ingredients

  • 6 large Yukon Gold potatoes
  • ¼ cup olive oil
  • teaspoons paprika
  • teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • ½ teaspoon chili powder adjust to taste
  • ¼ teaspoon black pepper
  • 1 teaspoon salt

Instructions

  • Preheat your oven to 450°F (232°C). Line a rimmed baking sheet with parchment paper for easy cleanup and nonstick roasting.
  • Peel and dice the potatoes into evenly sized pieces. Place them in a large mixing bowl.
  • In a small bowl, whisk together the olive oil, paprika, garlic powder, onion powder, cumin, chili powder, pepper, and salt until well combined.
  • Pour the seasoned oil over the potatoes and toss until all pieces are evenly coated.
  • Spread the potatoes in a single layer on the prepared baking sheet.
  • Roast for 35–45 minutes, stirring every 10 minutes for even browning.
  • Once golden and crisp on the outside and fork-tender on the inside, remove from the oven and season with additional salt if desired.

Cut the potatoes into uniform pieces to ensure even roasting.
Stir every 10 minutes during baking for the best crisp on all sides.
Keep an eye on parchment paper since the oven is set to high heat.
