A simple and delicious meal prep with roasted potatoes, broccoli, and garlic herb chicken. Topped with ranch for the perfect weekly lunch!

Ingredients

  • 2 lbs russet potatoes diced into ¾" pieces
  • cup grated Parmesan
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • 3 tbsp cooking oil divided
  • ½ tsp salt divided
  • ¼ tsp black pepper
  • 1 lb broccoli florets
  • 1 lb boneless skinless chicken breast
  • 1 tbsp garlic herb seasoning

Optional: 4 servings (2 tbsp each) ranch dressing

Instructions

Step 1: Preheat & Prep Potatoes

  • Preheat oven to 400°F (200°C).
  • Dice potatoes and place in a bowl.
  • In a small bowl, mix Parmesan, garlic powder, paprika, and ¼ tsp salt.
  • Add 1 tbsp oil and Parmesan seasoning to the potatoes. Toss well to coat.

Step 2: Roast the Potatoes

  • Spread potatoes on a parchment-lined baking sheet.
  • Roast for 30 minutes, stirring once halfway through, until golden and crispy.

Step 3: Prep and Roast the Broccoli

  • Toss broccoli florets with 1 tbsp oil, ¼ tsp salt, and black pepper.
  • Spread on a separate parchment-lined baking sheet.
  • Roast for 20 minutes, stirring once, until edges are browned and crisp-tender.

Step 4: Cook the Chicken

  • Fillet the chicken breasts into two thinner pieces.
  • Season both sides with garlic herb seasoning.
  • Heat 1 tbsp oil in a skillet over medium heat.
  • Cook chicken 5–6 minutes per side, until browned and fully cooked.
  • Transfer to a cutting board, let rest for 5 minutes, then slice into strips.

Step 5: Assemble Your Meal Prep

  • Divide potatoes, broccoli, and chicken into four meal prep containers.
  • Fill four small dressing containers with 2 tbsp ranch dressing each.
  • Refrigerate until ready to enjoy!
