Easy sausage pancake bites with cheddar cheese and maple syrup. A sweet and savory breakfast made for brunch or meal prep!

Ingredients

  • 1 lb ground breakfast sausage
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 cups pancake mix gluten-free if needed
  • cups milk
  • 1 egg
  • 2 tbsp melted butter
  • Maple syrup for drizzling
  • Butter for topping

Instructions

Step 1: Cook the Sausage

  • In a skillet over medium heat, brown the sausage until fully cooked.
  • Drain excess grease and remove from heat.
  • Stir in shredded cheese while sausage is still warm—this helps it bind together.

Step 2: Make the Pancake Batter

  • In a large mixing bowl, whisk together pancake mix, milk, egg, and melted butter until smooth and lump-free.

Step 3: Assemble the Bites

  • Preheat a griddle or non-stick skillet over medium heat. Lightly grease with oil or butter.
  • Pour a tablespoon of pancake batter onto the hot griddle.
  • Add a spoonful of the sausage-cheese mixture in the center.
  • Top with another small spoonful of pancake batter to cover.
  • Cook 2–3 minutes per side, until golden and cooked through.

Step 4: Serve

  • Stack the bites on a plate.
  • Add a pat of butter and drizzle generously with warm maple syrup.
  • Serve immediately or cool and freeze for later.
