Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¾ cup milk more if needed for consistency
  • 2 tablespoons melted butter plus extra for cooking
  • 1 teaspoon vanilla extract optional, for flavor
  • 8 breakfast sausages cooked (pork or chicken)
  • Maple syrup for serving

Instructions

Cook the Sausages

  • In a skillet over medium heat, cook the sausages until browned and fully cooked, about 8–10 minutes. Transfer to a paper towel-lined plate to drain excess grease.

Prepare the Pancake Batter

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, beat together the egg, milk, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry and stir just until combined and smooth. If the batter is too thick, add a tablespoon of milk at a time until you reach a dipping consistency.

Coat the Sausages

  • Preheat a skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  • Dip each sausage into the pancake batter, making sure it’s evenly coated on all sides.
  • Cook the Pancake-Wrapped Sausages
  • Place the coated sausages onto the hot skillet. Cook for 2–3 minutes per side, turning as needed, until golden brown and the batter is cooked through.

Serve
