This Savory Chicken and Cabbage Soup combines tender chicken, cabbage, carrots, and fresh dill for an easy, comforting one-pot dinner. Ready in 35 minutes, budget-friendly, nutritious, and perfect for cozy weeknight meals.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 carrots sliced
  • ½ head cabbage shredded
  • 2 cups cooked chicken shredded
  • 6 cups chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh dill chopped

Instructions

Sauté the Aromatics

  • Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until fragrant and translucent, about 5 minutes.

Add the Vegetables

  • Stir in the sliced carrots and shredded cabbage. Cook for another 5 minutes until the vegetables begin to soften.

Add Chicken and Broth

  • Mix in the shredded chicken. Pour in chicken broth, then add salt, pepper, and thyme.

Simmer

  • Bring to a boil, then reduce heat to low. Simmer for 20 minutes, allowing flavors to meld.

Finish with Dill

  • Taste and adjust seasoning. Stir in the fresh dill just before serving.

Serve

  • Ladle into bowls and serve hot with crusty bread, biscuits, or a light salad.

Notes

Creamy option: Stir in 1 cup heavy cream after simmering for a richer soup.
Extra veggies: Add diced potatoes, celery, or spinach for more nutrients.
For heat: Add red pepper flakes or a splash of hot sauce.
Holiday twist: Substitute shredded turkey for chicken.
Gluten-free: Use gluten-free broth and pair with gluten-free bread.
