This easy smoked sausage and potato bake combines roasted potatoes, onions, and peppers with smoky sausage in one hearty, flavorful dish.

Ingredients

  • lbs baby creamer potatoes halved
  • lbs beef smoked sausage sliced into 1-inch pieces
  • 1 large yellow onion diced
  • 1 green bell pepper diced
  • 2 Tbsp olive oil
  • 2 tsp Slap Ya Mama seasoning or Cajun seasoning of choice
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp red pepper flakes optional for heat
  • 4 Tbsp butter cubed

Optional Add-ins: sliced mushrooms, diced zucchini, or a sprinkle of grated parmesan before serving.

Instructions

Step 1: Prep the Oven and Pan

  • Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish with nonstick spray and set it aside.

Step 2: Season the Potatoes

  • In a large bowl, toss the halved potatoes with the olive oil until evenly coated. Sprinkle in the Slap Ya Mama seasoning, garlic powder, black pepper, and red pepper flakes. Toss to coat the potatoes thoroughly.

Step 3: Add Sausage and Veggies

  • Add the sliced smoked sausage, diced onion, and bell pepper to the seasoned potatoes. Gently toss everything together so the flavors are well distributed.

Step 4: Transfer and Top with Butter

  • Pour the mixture into your prepared baking dish. Use a spatula to spread it out into an even layer. Dot the top with the cubed butter, spacing the pieces evenly across the dish.

Step 5: Bake Covered

  • Cover the dish tightly with aluminum foil and bake for 30 minutes.

Step 6: Uncover and Bake Again

  • Remove the foil and return the dish to the oven. Bake for an additional 15–20 minutes, or until the potatoes are fork-tender and the edges are golden and crisp.

Step 7: Rest and Serve

  • Let the casserole rest for 5 minutes before serving. This gives the flavors time to settle and the dish to cool slightly for easier serving.
