A cozy dessert that combines the warm flavors of snickerdoodle cookies with a golden, gooey cobbler crust. Perfect for fall and holiday baking!

Ingredients

Base:

  • cup unsalted butter melted
  • ¾ cup whole milk
  • 2 teaspoons vanilla extract
  • cups granulated sugar
  • cups all-purpose flour
  • teaspoons baking powder
  • ¾ teaspoon salt
  • 2 teaspoons cinnamon
  • cups packed brown sugar
  • cups hot water

Topping:

  • ¼ cup sugar
  • ½ teaspoon cinnamon

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 350°F (175°C).
  • Pour the melted butter into a 9×13-inch baking dish and spread evenly.

Step 2: Mix the Batter

  • In a large bowl, whisk together the milk, vanilla, and sugar.
  • Add the flour, baking powder, salt, and cinnamon. Stir just until combined—don’t overmix.

Step 3: Assemble the Cobbler

  • Spoon the batter evenly over the melted butter in the pan.
  • Sprinkle the brown sugar evenly over the top (yes, it looks like a lot—that’s the magic).
  • Gently pour the hot water over everything. Don’t stir.

Step 4: Bake

  • Place the pan in the oven and bake for 30–35 minutes, or until the top is golden and the center is mostly set with a gooey layer underneath.

Step 5: Add the Topping

  • While the cobbler is still hot, mix the sugar and cinnamon for the topping and sprinkle it generously over the top.

Step 6: Serve and Enjoy

  • Let it cool slightly before serving. Spoon into bowls and top with a scoop of vanilla ice cream or a dollop of whipped cream.
