Ingredients

  • 1 cup boiled and mashed potatoes about 3 medium potatoes
  • 2 tablespoons onion optional, for crunch
  • 2 tablespoons coriander leaves finely chopped
  • ½ teaspoon red chili powder
  • ½ teaspoon garam masala powder
  • 1 teaspoon chaat masala powder
  • 6 bread slices
  • ¼ cup green chutney fresh cilantro-mint chutney works best
  • ½ cup grated mozzarella cheese or Amul processed cheese
  • 2 tablespoons butter
  • Salt to taste

Instructions

Step 1: Prepare the Potato Filling

  • In a bowl, add the boiled and mashed potatoes. Mix in onion, coriander leaves, red chili powder, garam masala, chaat masala, and salt. Stir until everything is well combined. This spiced potato mixture is the heart of your sandwich.

Step 2: Layer the Sandwich

  • Take one bread slice and spread green chutney evenly. Sprinkle grated mozzarella cheese over it.
  • On another bread slice, spread a generous layer of the potato mixture. Place the slices together, then top with another chutney-coated bread slice and more potato filling if you want to make it a double-layered sandwich. Finish with a final bread slice on top.

Step 3: Toast or Grill

  • Spread butter on the outer sides of the sandwich. Place it on a hot tawa or grill and toast until golden brown and crispy on both sides. If you have a sandwich maker, you can use that for perfect crisp edges.

Step 4: Serve

  • Cut the sandwich into triangles and serve hot with ketchup, extra chutney, or even yogurt dip.
