Ingredients

For the Tortilla Quiche

  • 1 large whole wheat tortilla
  • 3 large eggs
  • ¼ cup low-fat cottage cheese
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • teaspoon cayenne pepper
  • Black pepper to taste
  • ½ cup chopped vegetables e.g., baby spinach, bell peppers, onions, mushrooms
  • cup shredded cheese such as Tex-Mex blend, cheddar, or mozzarella

Instructions

Prepare the Oven

  • Preheat your oven to 350°F (175°C) and adjust the oven rack to the middle position.

Shape the Tortilla Crust

  • Gently press the tortilla into an 8-inch non-stick cake pan, forming it into the shape of the pan so it creates a crust base and walls.

Blend the Egg Mixture

  • In a small blender, combine eggs, cottage cheese, salt, garlic powder, cayenne, and black pepper. Blend for about 10–15 seconds, until smooth.
  • (If you don’t have a blender, whisk vigorously until well combined.)

Fill the Tortilla

  • Pour the egg mixture directly into the tortilla shell, spreading evenly.

Add the Toppings

  • Top with chopped vegetables and sprinkle with shredded cheese.

Bake

  • Place in the oven and bake for 20–25 minutes, or until the eggs are set and the tortilla edges are golden brown.

Cool & Serve

  • Allow the quiche to cool for 5 minutes before removing it from the pan. Slice into quarters and enjoy warm, or pack it for lunch later.

Notes

Tortilla Type: Whole wheat tortillas hold up best, but you can also use spinach or low-carb tortillas.
Add-Ins: Try adding diced tomatoes, feta, or fresh herbs for extra flavor.
Cheese Options: Swap Tex-Mex for goat cheese, cheddar, or Swiss.
No Blender? A whisk works fine—just make sure your cottage cheese is well mixed.
Extra Crispiness: Brush the tortilla lightly with olive oil before baking.
