Ingredients

  • 1 can 20 oz crushed pineapple with juice
  • ¾ cup sugar
  • 2 large eggs
  • 2 tablespoons cornstarch
  • 2 teaspoons vanilla extract
  • tablespoons butter sliced into pats
  • 1 teaspoon ground cinnamon

Instructions

Step 1: Prep the Dish

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish and set it aside.

Step 2: Mix the Filling

  • In a large mixing bowl, stir together the crushed pineapple (with its juice), sugar, eggs, cornstarch, and vanilla extract until fully combined and smooth.

Step 3: Assemble

  • Pour the pineapple mixture into the prepared baking dish. Dot the top with slices of butter and sprinkle evenly with cinnamon.

Step 4: Bake

  • Bake for 45 minutes, or until the edges are bubbly and the top is lightly golden.

Step 5: Serve
