Make these Vampire Bite Red Velvet Brownies for your next Halloween party. Rich, fudgy brownies topped with cream cheese frosting and dark chocolate drizzle—fun and festive!

Ingredients

Brownies

  • 1 cup 225g unsalted butter, melted
  • 2 cups 400g granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon red food coloring
  • 2 cups 250g all-purpose flour
  • ½ cup 50g unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup 175g dark chocolate chips

Cream Cheese Frosting

  • 8 oz 225g cream cheese, softened
  • ½ cup 115g unsalted butter, softened
  • 4 cups 480g powdered sugar
  • 1 teaspoon vanilla extract
  • 1 –2 tablespoons milk as needed

Dark Chocolate Drizzle

  • ½ cup 90g dark chocolate chips
  • 2 tablespoons heavy cream

Instructions

Prepare Pan & Oven:

  • Preheat oven to 350°F (175°C). Grease or line a 9×13 inch baking pan with parchment paper.

Mix Dry Ingredients:

  • In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt.

Mix Wet Ingredients:

  • In a large bowl, whisk melted butter and sugar until combined. Add eggs one at a time, then stir in vanilla and red food coloring.

Combine:

  • Gently fold the dry mixture into the wet mixture until just combined. Stir in dark chocolate chips.

Bake:

  • Pour the batter into the pan and smooth the top. Bake for 25–30 minutes or until a toothpick inserted comes out with moist crumbs.

Cool:

  • Let brownies cool completely in the pan on a wire rack before frosting.

Make Frosting:

  • Beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy. Adjust consistency with milk if needed.

Frost Brownies:

  • Spread frosting over cooled brownies.

Make Drizzle:

  • Melt dark chocolate chips with cream until smooth. Drizzle over frosted brownies to create a “bite mark” effect.

Serve:

  • Chill slightly for cleaner cuts, then slice into 24 squares.

Notes

Don’t overmix the batter—stir until just combined for fudgier brownies.
Use gel food coloring for a vibrant red hue without thinning the batter.
For extra “vampire drama,” poke with a skewer and drip a little red gel icing or strawberry jam.
