Ingredients

For the Whipped Feta

  • 8 oz 225 g feta cheese, crumbled
  • 4 oz 115 g cream cheese, softened
  • 1 –2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Freshly ground black pepper to taste

For the Roasted Strawberries

  • 1 pint 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Freshly ground black pepper to taste

Garnish

  • Fresh basil or mint leaves chopped
  • Additional olive oil for drizzling
  • Black sesame seeds optional

Instructions

Roast the Strawberries

  • Preheat oven to 375°F (190°C).
  • Toss halved strawberries with balsamic vinegar, honey, and a pinch of pepper.
  • Spread on a parchment-lined baking sheet and roast for 15–20 minutes until soft and slightly caramelized. Let cool.

Make the Whipped Feta

  • In a food processor, combine feta, cream cheese, olive oil, lemon juice, and black pepper.
  • Blend until smooth and creamy. Adjust with more olive oil if needed for a spreadable consistency.

Assemble

  • Spread the whipped feta onto a shallow plate or bowl in a swooped swirl.
  • Top with roasted strawberries and drizzle with olive oil.
  • Garnish with basil or mint, and sprinkle with black sesame seeds if using. Serve immediately.
