Cherry Cheesecake Cookies

These irresistible Cherry Cheesecake Cookies are a Crumbl Copycat favorite! Featuring a soft, graham cracker-based cookie, topped with creamy cream cheese frosting, a buttery streusel, and juicy cherry pie filling. Perfect for dessert or snack time—everyone will love them!

Ingredients:

For the Cookies:

  • 1 cup salted butter, room temperature 🧈
  • 1½ cups brown sugar (light or dark)
  • 1 large egg 🥚
  • 1 tsp vanilla extract
  • ½ tsp salt 🧂
  • 1 tsp baking soda
  • 2 cups graham cracker crumbs (about 12 crackers)
  • 2 cups all-purpose flour

For the Frosting:

  • 4 oz cream cheese, room temperature
  • ½ cup salted butter, softened 🧈
  • 2½ cups powdered sugar
  • 1½ tsp vanilla extract
  • 1-2 tbsp cornstarch

For the Streusel:

  • ½ cup graham cracker crumbs (about 4 crackers)
  • 1 tbsp salted butter, melted 🧈
  • 1 (21 oz) can cherry pie filling 🍒

Instructions:

1. Make the Cookies:

  • Cream Butter & Sugar: Beat butter and brown sugar with an electric mixer on high speed until fluffy (about 3 minutes). Scrape down the bowl as needed.
  • Add Egg & Vanilla: Mix in the egg and vanilla until well combined.
  • Mix Dry Ingredients: Add salt, baking soda, and graham cracker crumbs, then gradually mix in the flour.
  • Bake: Preheat oven to 350°F (175°C). Scoop ⅓ cup portions of dough, roll in graham cracker crumbs (optional), and place on lined baking sheets. Bake for 10-11 minutes. Cool on a wire rack.

2. Prepare the Frosting:

  • Beat cream cheese and butter together until creamy. Add powdered sugar gradually, followed by vanilla. Thicken with cornstarch if needed, then pipe frosting onto cooled cookies.

3. Make the Streusel & Assemble:

  • Mix graham cracker crumbs and melted butter for streusel. Sprinkle over frosted cookies. Top each cookie with 3-5 cherries from the cherry pie filling.

4. Serve:
