💜 Purple Sweet Potato Pie 🥧

Brighten up your dessert table with this vibrant and creamy Purple Sweet Potato Pie! Bursting with rich flavors of coconut, cinnamon, and cardamom, this pie is sure to impress at any gathering. The smooth, sweet filling paired with a flaky crust makes for a dessert everyone will crave! 🍠✨

Ingredients:

  • 3 large eggs, lightly beaten
  • 1 cup packed brown sugar
  • 1 lb purple sweet potatoes
  • 1 cup canned coconut milk, shaken
  • 4 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1 tsp table salt
  • 1 tsp ground cardamom
  • 1 tsp ground cinnamon
  • 9-inch pie crust (store-bought or homemade)

Instructions:

  1. Preheat oven to 425°F (220°C). Pierce sweet potatoes with a fork, place on a baking sheet, and bake for 40-45 mins until tender.
  2. Once baked, let them cool slightly, peel, and transfer the flesh to a food processor.
  3. Lower oven temp to 350°F (175°C).
  4. Add butter, eggs, sugar, coconut milk, vanilla, ginger, salt, cardamom, and cinnamon to the processor and blend until smooth.
  5. Pour filling into the pie crust and bake for 55-60 mins until set.
  6. Cool for at least 1 hour, slice, and enjoy!
