Ingredients

  • 4 large Russet potatoes cut into wedges
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • 4 tbsp olive oil
  • ½ cup freshly shredded Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

Step 1: Prep the Potatoes

  • Wash and scrub the potatoes thoroughly. Cut each potato into 8 wedges for uniform baking. Place them in a large mixing bowl.

Step 2: Season and Toss

  • Drizzle olive oil over the wedges and toss to coat them evenly.
  • In a separate small bowl, mix the garlic powder, salt, and Italian seasoning. Sprinkle this mixture over the wedges and toss again.

Step 3: Add the Parmesan

  • Sprinkle the freshly shredded Parmesan over the wedges, tossing lightly to coat. Press some cheese onto each wedge for extra crisp and flavor.

Step 4: Arrange and Bake

  • Place the wedges on a baking sheet lined with parchment paper, skin side down for the best texture.
  • Bake at 400°F (200°C) for 25 to 35 minutes, or until the potatoes are golden and fork-tender.

Step 5: Garnish and Serve

  • Once baked, remove from the oven and let cool slightly. Garnish with freshly chopped parsley.
