Ingredients

Basundi Ingredients

  • 500 ml full fat milk or whole milk
  • 200 ml condensed milk
  • 1 tsp green cardamon powder [elaichi powder]
  • 6 to 7 saffron or kesar
  • 1/2 tbsp chopped almond [badam]
  • 1/2 tbsp chopped cashew nut [kaju]
  • 1/2 tbsp chopped pistachios
  • 1/2 tsp nutmeg powder

Instructions

  • At first, pour milk in non-stick deep bottom pan.
  • Now bring it to boil in a medium to high flame.
  • When the milk starts boiling stir frequently which helps to prevent the milk get burnt.
  • After 7 to 8 min add condensed milk in it and make it boil in medium to low flame for some time.
  • Don't forget to stir the mixture.
  • At this stage, basundi gets thicken and reduced half of its quantity.
  • Now pour saffron milk,also sprinkle a teaspoon of cardamom powder in it.
  • After that add some dried fruits including chopped almonds, cashew nut, pistachios in this basundi recipe.
  • Mix everything and simmer for another some time.
  • Next, turn off the gas at set aside basundi for cool down.
  • You can cool it completely in refrigerator for at least 2 to 3 hour where overall basundi gets thicken
  • Finally, garnish this basundi with freshly chopped dry fruits and serve chilled or with malpua.

Notes

Basundi Recipe Note

  1. As the basundi gets thicken after chilled in the refrigerator, so keep the consistency accordingly.
  2. If you want to make basundi without condensed milk then use 80 to 100 grams of sugar instead of condensed milk.
