Bhel puri recipe is one of the delicious street food in India, this bombay bhel recipe is made of a mixture of puffed rice, freshly chopped onions, tomatoes, fried peanut,sev and tamarind chutney, green chutney, red chutney flavour with a few Indian spices.

Ingredients

Bhel Puri Ingredients

  • 250 to 300 grams Puffed Rice[Murmura
  • 100 grams chopped onions
  • 2 medium-size chopped boiled potatoes
  • 2 medium-size chopped tomatoes[deseeded]
  • 1 tbsp chopped green chili
  • 2 to 3 tbsp chopped coriander leaves
  • 50 grams sev or bhujia
  • 25 to 50 grams fried peanut
  • 25 to 50 grams masala channa[optional]
  • 6 to 8 papri for decoration[optional]
  • 2 tsp black salt
  • 1 tsp cumin powder
  • 1 tsp chaat masala powder

Red Chutney For Bhel Puri

  • 8 to 10 Dried Red Chili[water soaked]
  • 4 to 5 garlic piece
  • ½ tsp white salt
  • 1/2 tsp black salt
  • 1 tbsp sugar
  • Water 50 ml

Green Chutney For Bhel Puri

  • 200 grams of fresh coriander leaves.
  • 50 grams of pudina leaves
  • 1 tbsp ginger-garlic [chopped]
  • 2 to 3 green chili [chopped]
  • 2 to 3 clove
  • 1 tsp cumin seed
  • ½ tsp amchur powder
  • 3 tbsp chopped onions [optional]
  • Salt to taste
  • Dash of water[add more if required]

Tamarind Chutney For Bhel Puri

  • 60 grams of tamarind
  • 100 grams of jaggery
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • 100 ml water[adjust depending upon thickness]

Instructions

  • At first, for basic preparation of bhel puri recipe wash potatoes, boiled them in a pressure cooker for up to 5 to 6 whistles.
  • When potatoes become cool a little bit.,then peel and chopped them for later usage.
  • Now chopped onions, tomatoes, fresh coriander leaves, green chili.
  • Also fried some peanuts and papries and set aside bhujia or sev for assembling purposes.
  • Now for preparing red chutney for bhel puri soaked some dried red chili in warm water.
  • Then add them to a blender along with a tablespoon of sugar, black salt, white salt,4 to 5 garlic piece, and a dash of water.
  • Make a smooth red chutney paste and keep in a separate bowl for assembling purpose.
  • Now for, preparing green chutney for bhel puri in a blender pour fresh coriander leaves, pudina leaves, chopped onions, green chili, and a tbsp of chopped ginger-garlic.
  • Additionally add some spices including a tsp of cumin seed, amchur powder(dry mango powder), a pinch of salt, and a dash of water.
  • Now, blend it and make smooth green chutney.
  • If chutney becomes very thick you can add a little water and set it aside for later usage.
  • Next for preparing sweet and sour tamarind chutney in a bowl we add tamarind and pour some warm water.
  • Then squeeze each tamarind and deseeded them and pass it through a sieve and make it a smooth mixture.
  • Now, in a pan pour water tamarind mixture, jaggery, red chili powder, coriander powder, cumin powder, and salt to taste.
  • After that let them simmer until it becomes slightly thick, also check the test of sweetness if needed add more jaggery.
  • Then transfer this sweet and sour tamarind chutney to a container for later use.
  • Now for assembling bhel puri recipe pour puffed rice or murmura in a large mixing bowl.
  • Then mix chopped boil potatoes, tomatoes and onions, green chili, and coriander leaves.
  • Then, add tamarind chutney, green chutney, red chutney.
  • Add a few tablespoons of bhujia or sev, fried peanuts, and sprinkles some roasted cumin powder, chat masala powder, black salt.
  • Now mix them together,

Notes

Bhel Puri Recipe Note

  1. While assembling bhel puri make sure don't add a lot of chutney at once because it will become soggy, if required add them after mixing the first batch.
  2. For storing green chutney keep them in air-tight container in the refrigerator for at least 7 days.I suggest don't use any onion while preparing chutney because it will start giving pungent flavor after 2 days.
