  • 3 to 4 tbsp butter
  • 100 grams of sugar
  • 12 cashew nut
  • 10 almond
  • 1 butter paper

  • 500 ml heavy fresh cream
  • 200 ml condensed
  • 2 tsp butterscotch essence

  • To make butterscotch ice cream at home,at first prepare praline for this add butter in a pan and melt it in low flame.
  • Then add sugar in it and stir occasionally in low flame until sugar completely melt and caramelized with brown color syrup.
  • Now add chopped dried fruits and mix the chopped nuts in caramelized sugar.
  • After that keep this hot praline mixture on a parchment paper to cool and become stiff.
  • Using a mortar-pestle crush the praline into coarse mixture.Don't make a fine praline mixture.
  • Now for preparing butter scotch ice cream recipe place a chilled glass bowl on top of ice cubes then add chilled heavy cream in it.
  • Using an electric hand mixture mix the cream until it thickens and generates soft peak.
  • Now, pour chilled condensed milk in it and gently mix it with spatula.
  • After that pour a few teaspoons of indian butterscotch essence in it.
  • Next add some crushed praline in this butterscotch ice cream mixture.
  • Finally pour the creamy butter scotch ice cream mixture in an airtight container,sprinkle some crushed praline on it.
  • Now place a plastic wrap on the container mouth and sealed with lid,then keep this ice cream mixture in the refrigerator for at least 8 hour till set.
  • Finally scoop out in butterscotch ice cream in a bowl and garnish with crushed praline on top of it, serve immediately to your guest.
