At first,for making gajar halwa wash the carrots in running water.
Then,peel the carrots carefully.
Now, take each carrot and grate them in medium size with a hand grater or food processor.
Next for roasting dry fruits heat butter in a pan and add cashew nut, almond,pista fry in low flame for up to 30 to 45 sec.
when nuts become slightly golden brown,add raisins in it and fry until they plum up.
After that,immediately remove dry fruits from the pan.
Now for making the best carrot halwa add grated carrots in a heavy bottom pan and cook for 2 to 3 min in medium to low flame until they become soft.
Finally, add full-fat milk, mix all grated carrots with it and let the milk brings to a boil.
Stir continuously at least 30 to 35 min in medium to low flame unless milk gets stick in the pan.
When 80% of milk evaporates then add sugar and mix it with milk and carrots.
As sugar releases a lot of moisture, make a quick stir for another 8 to 10 min in low flame.
After that add clarified butter or ghee and mix it with halwa.
For enhancing the flavor of carrot halwa sprinkle cardamom powder and mix it with halwa.
If you want to make gajar halwa with khoya, add it now and gently stir 2 to 3 min in low flame until khoya completely blends with halwa.
Finally,for garnishing carrot halwa add roasted dry fruit and mix it with halwa.
