This restaurant style chicken fried rice recipe is one of the popular quickest fried rice recipes in India in which fragrant long grain basmati rice is fried with fresh vegetables, scrambled eggs, fried chickens, soy sauce, vinegar and a few aromatic indian spices.

Ingredients

Ingredients For Chicken Fried Rice

  • 4 to 5 tbsp oil
  • 1 tbsp chopped ginger garlic
  • 3 tbsp chopped capsicum or bell pepper
  • 3 tbsp chopped spring onions [optional]
  • 3 tbsp chopped french beans
  • 3 tbsp chopped carrots
  • 3 tbsp fresh green peas
  • 1 tbsp chopped green chili
  • salt to taste
  • 1 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp nutmeg powder [ jaiphal powder ]
  • 1/4 tbsp strand mace or [ javithri powder ]
  • 1/4 tsp star anise powder [chakri phool powder]
  • 2 tsp black pepper
  • 200 grams chicken breast
  • 2 eggs
  • 2 tbsp corn starch powder

Cooking Rice For Fried Rice

  • 1.5 lt to 2 lt chicken stock
  • 200 to 250 gm basmati rice
  • 1/2 tbsp oil
  • 1/2 tbsp salt

  • To cook best chicken fried rice recipe take long grain good quality basmati rice and wash thoroughly in running water.
  • Then soak them in water up to 30 min.
  • Now for cooking chicken for chicken fried rice pour water in a deep kadai, sprinkle black pepper powder, salt and mix all of them together.
  • Now add 4 garlic cloves and let the water boil for some time.
  • Then add boneless chicken pieces in the pan,cover the pan and boil chickens in medium to high flame for 10 to 15 min.
  • At this stage separate the chicken stock in another bowl and place the boil chickens in a plate,chop them into small pieces.
  • After that, in a mixing bowl add chicken pieces, cornflour, black pepper, salt, red chilli powder.
  • Mix all of them together, then pour 1 tbsp soy sauce, mix it properly.
  • After that heat oil in a pan and fry the chickens in medium to high flame until it becomes crispy.
  • Now to cook perfect restaurant style chicken fried rice , pour chicken stock in deep bottom pan.
  • Then add soaked rice in this hot water and cook in medium flame.
  • Remember we need grainy rice for fried rice,so cook the rice till al-dente.
  • When rice achieved it's desired state turn off the gas and drain off the rice in colander.
  • Now cool this rice completely and set aside for later use.
  • Now for cooking chicken fried rice recipe, heat oil in a pan on medium flame.
  • Then add chopped ginger garlic and saute them for another 1 to 2 min in medium flame.
  • Next add chopped onions,carrots,french beans,capsicum saute them together in medium flame for some time.
  • Furthermore ,add green peas,cook them together for sometime in medium flame.
  • After that sprinkle black pepper powder,salt and mix them together.
  • Now crack 2 eggs on the side of the pan, scramble them and mix with veggies.
  • Finally fluff the rice from one side,also sprinkle pinch of salt and black pepper, nutmeg, mace powder.
  • To cook authentic chinese fried rice recipe must add 1 tsp soy sauce,2 tsp vinegar mix them together.
  • Finally add our fried chicken pieces which we made earlier.

  1. To make fluffy chicken fried rice make sure you add a tablespoon of oil on rice and after cooking drain the rice in a colander and spread the al-dente rice in a cotton cloth.
