Chicken vindaloo recipe is a Portuguese-influenced famous Goan dish which is made by cooking meat with spices and vinegar. Below is the step by step instructions to prepare this delicious chicken vindaloo curry at home.

Ingredients

Ingredients for vindaloo masala

  • 15 to 20 whole dry Kashmiri red chilies
  • 3 tablespoons of vinegar
  • 2 tablespoons coriander seed
  • 10 to 15 peppercorn
  • 1/2 teaspoon mustard seed
  • 4 cloves
  • 4 green cardamoms
  • 2 inch cinnamon
  • 50 ml warm water

Ingredients for chicken vindaloo curry

  • 600 grams of bone-in chicken
  • 5 tablespoons oil
  • 2 large slices of onions
  • 1 tablespoon of ginger garlic paste
  • 4 to 5 chopped green chilis
  • 3 large tomato puree
  • 1 tablespoon vinegar.
  • 1/2 tablespoon of sugar.
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 250 ml water

Instructions

  • Make vindaloo masala
  • First to make vindaloo masala in a small mixing bowl first add dried red chillies, and warm water.
  • Then add vinegar to it. Mix properly and set aside for later usage.
  • Now in a frying pan dry roast coriander seed, peppercorns, mustard seed, cloves, green cardamoms, and cinnamon on medium to low flame.
  • Next to make fine vindaloo masala in a blender jar blend soaked red chili along with vinger , water and roasted whole spices.

  • Now to marinate chicken vindaloo curry in a large mixing bowl mix bone-in chicken, oil , vindaloo masala.
  • Next, keep this chicken marination in the refrigerator for at least 1 hour, or overnight if you have time.
  • How to make chicken vindaloo
  • Now to cook goan chicken vindaloo recipe first heat oil in a kadai and spread it properly.
  • Then saute the onions in medium to high flame till the onions become golden brown.
  • Next, add ginger garlic paste, and chopped green chilis cook them for some time till the raw smell of ginger garlic paste completely goes away.
  • Next pour tomato puree and cook sometimes till the raw smell of tomatoes eventually vanishes.
  • Finally, add marinated chicken to the pan.
  • Pour a dash of water then saute the marinated chicken for 10 min on medium flame.
  • After that add the remaining vindaloo masala and cook this chicken vindaloo curry for some time on medium flame.
  • Now add vinegar, sugar, turmeric powder, and salt to taste.
  • Next pour water, cover and cook chicken vindaloo curry on medium to low flame until chickens are properly cooked.
