Dahi vada recipe is one of the popular Indian street food where fried urad dal vada is garnished with thick yogurt, sweet and sour tamarind chutney, spicy green chutney and a few indian spices. Must try this dahi bhalla recipe at home.

Ingredients

Dahi Vada Ingredients

  • 200 grams of urad dal[whole black gram]
  • 1 tsp cumin seed
  • 4 to 5 tbsp water
  • 1 to 2 chopped green chili
  • ½ inch ginger
  • 6 to 8 cashew nut
  • 8 to 10 raisins[optional]
  • Salt to taste
  • 500 ml oil for deep fry

Ingredients For Green Chutney

  • 200 grams of fresh coriander leaves.
  • 50 grams of pudina leaves
  • 1 tbsp ginger-garlic [chopped]
  • 2 to 3 green chili [chopped]
  • 2 to 3 clove
  • 1 tsp cumin seed
  • ½ tsp amchur powder
  • 3 tbsp chopped onions [optional]
  • Salt to taste
  • Dash of water [add more if required]

Ingredients For Tamarind Chutney

  • 60 grams of tamarind
  • 100 grams of jaggery
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • 100 ml water[adjust depending upon thickness]

Garnishing Ingredients For Dahi Vada

  • 1 tsp red chili powder
  • 1 tsp chat masala powder
  • ½ tsp roasted cumin powder
  • 1 tsp black salt
  • 3 tbsp freshly chopped coriander leaves
  • 600 grams of Yogurt or Dahi
  • 3 to 4 tbsp powder sugar

Instructions

  • At first, preparing green chutney for dahi vada in a blender pour fresh coriander leaves, pudina leaves, chopped onions, green chili, and a tbsp of chopped ginger-garlic.
  • Additionally add some spices including a tsp of cumin seed, amchur powder(dry mango powder), a pinch of salt, and a dash of water.
  • Now, blend it and make smooth green chutney.
  • If chutney becomes very thick you can add a little water and set it aside for later usage.
  • Next for preparing sweet and sour tamarind chutney in a bowl we add tamarind and pour some warm water.
  • Then squeeze each tamarind and deseeded them and pass it through a sieve and make it a smooth mixture.
  • Now, in a pan pour water tamarind mixture, jaggery, red chili powder, coriander powder, cumin powder, and salt to taste.
  • After that let them simmer until it becomes slightly thick, also check the test of sweetness if needed add more jaggery.
  • Then transfer this sweet and sour tamarind chutney to a container for later use.
  • Now for preparing soft dahi vada, soak urad dal in the water for at least 8 to 10 hours.
  • After that, pour soaked urad dal, dash of water in a blender, and make a soft fluffy batter.
  • Now transfer the batter to a bowl.
  • Add a dash of water, a teaspoon of cumin seed, salt, chopped ginger, and green chili.
  • Next continuously beat it in one direction until air goes inside the batter and becomes more fluffy and light.
  • Now for the frying batter, pour oil into a Kadai and heat it on medium flame.
  • Then gently pour 3 tbsp of batter in hot oil and fry them in medium flame until it becomes crisp and slightly golden brown from both sides.
  • Now take them out from the pan and place them on kitchen tissue to drain excess oil from it.
  • After that transfer the vada into cold water for at least 20 to 25 min.
  • Finally for assembling dahi vada recipe in a bowl pour yogurt, add a few tablespoons of sugar, a pinch of salt, and beat everything until yogurt becomes smooth.
  • Furthermore pick vada one by one gently squeeze them in between palms to drain excess water from them, place them on the serving plate.
  • Now, pour beat dahi over each vada. 
  • Then, add tamarind chutney, green chutney and sprinkle some roasted cumin powder, red chili powder, chat masala powder, black salt over it.

  1. While assembling Dahi vada make sure the curd must be sweet and whisk properly with powder sugar and pinch of salt.
