Ghee rice recipe is the most delicious, fragrant south indian rice dish which is made with long grain basmati rice , desi ghee dry fruits and a few aromatic indian spices. Below is the step by step instructions to prepare this delicious neychoru recipe at home.

Ingredients

Ingredients for neychoru recipe

  • 200 grams long grain basmati rice
  • 3 tablespoons clarified butter or ghee
  • 15 to 20 cashew nuts
  • 15 to 20 raisins
  • 50 ml warm water

Other ingredients for ghee rice

  • 2 teaspoons cumin seed
  • 4 green cardamoms
  • 4 cloves
  • 2 inches cinnamon
  • 1 bay leaf
  • 1 medium size slice of onions
  • 3 chopped green chilli
  • 1 teaspoon salt
  • 3 tablespoons coriander leaves freshly chopped
  • 400 ml water

Instructions

  • Soaking rice for neychoru
  • At first for preparing neychoru recipe first add long grain basmati rice in a large bowl.
  • Then rinse them thoroughly in running water and soak them for some time.
  • Fry dry fruits
  • Now to fry dry fruits for ghee rice recipe first melt ghee on low flame.
  • Next, add cashew nuts and raisins and continuously stir them in low flame until cashews become golden brown and raisins plum up.
  • After that, Take them out from kadai and set them aside for later usage.
  • How to make ghee rice
  • Now to cook ghee rice in the same kadai saute cumin seed, green cardamoms, cloves, cinnamon, bay leaf in medium flame.
  • After that add chopped green chili, slice onions and fry them till golden brown
  • Now add the drained rice. Gently stir the rice for some time. Make sure to not over-stir because the rice grains may break.
  • Now pour water. Stir and mix the rice properly.
  • Also, sprinkle salt. Check the taste of the water if it is required you can add it later.
  • After that cover the Kadai with a lid. Initially increase the temperature of kadai then reduce the flame to low heat.
  • It takes approximately 15 to 20 min to properly cook less sticky and fluffy ghee rice.
  • Check the rice you get proper fluffy rice.
  • Finally garnish ghee rice with the fried cashews and raisins, freshly chopped coriander leaves and black pepper powder.

Notes

Ghee Rice Recipe Note

  1. Don't add a lot of water to cook ghee rice, then it may become soggy without fluffy rice.
  2. Before serving ghee rice you can also sprinkle sweet cranberries, almonds and a 2 tablespoon of melted ghee on top of the rice.
