Ground Beef Stroganoff is a 30-minute one-pan meal with creamy sauce, savory beef, and tender noodles. The perfect comfort food for busy weeknights.

Ingredients

  • 6 oz egg noodles
  • 1 lb ground beef
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1 cup beef broth
  • 1 ¼ cups milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • ¼ cup sour cream

Instructions

Cook the Noodles:

  • Bring a large pot of water to a boil. Add egg noodles and cook according to package directions. Drain and set aside.

Brown the Beef:

  • While the noodles cook, heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart, for 6–8 minutes or until fully browned. Drain excess fat and set the beef aside.

Make a Roux:

  • In the same skillet, melt butter over medium heat. Whisk in the flour and cook for 2 minutes to form a smooth roux.

Create the Sauce:

  • Gradually whisk in the beef broth. Continue to stir for 3–4 minutes until the sauce thickens slightly.

Add the Milk:

  • Slowly pour in the milk while stirring. Cook another 5–7 minutes, stirring frequently, until the sauce thickens and becomes smooth.

Season the Sauce:

  • Stir in garlic powder, onion powder, salt, and pepper.

Combine Everything:

  • Add the cooked noodles and ground beef back to the skillet. Stir until combined and heated through.

Finish with Sour Cream:

  • Turn the heat to low. Stir in the sour cream until the sauce is creamy and well blended.

Serve:

  • Spoon into bowls and serve hot. Pair with steamed vegetables or garlic bread for a complete meal.

Notes

Use ground turkey or ground chicken for a lighter version.
Stir frequently while making the roux and sauce to prevent lumps.
