Ingredients

Ingredients For Gulab Jamun Dough

  • 2 tbsp ghee
  • 300 grams of milk powder
  • 100 grams of all-purpose flour
  • 2 tbsp hung curd or yogurt
  • 1/4 tsp baking soda
  • 100 ml warm milk[adjust as need]

Ingredients For Sugar Syrup

  • 350 grams of sugar
  • 350 ml of water
  • 1 tsp green cardamom powder
  • 1 tbsp rose water
  • 8 to 10 saffron strands or kesar
  • 2 tsp lemon juice
  • 1 tbsp semolina or suji [optional]

Other Gulab Jamun Ingredients

  • 5 to 6 tbsp ghee for deep fry
  • 1 tbsp chopped pistachios for garnishing

Instructions

  • At first, for preparing dough for gulab jamun using milk powder pour ghee into the frying pan.
  • Melt the ghee on low flame.
  • Now, add milk powder, all-purpose flour or maida here we strictly follow a simple 3:1 ratio.
  • Also, add a tablespoon of curd and a teaspoon of baking soda.
  • Next, mix warm milk and mix everything on low flame until you get a soft dough.
  • Now for making sugar syrup for gulab jamun pour sugar into the deep bottom pan.
  • Also pour a proportional amount of water and dissolve the sugar completely in a medium to high flame.
  • When sugar syrup starts boiling add cardamom powder, a few strands of saffron, and a tablespoon of rose water.
  • To avoid any crystallization of sugar syrup you can add a tsp of lemon juice.
  • Now, let the syrup starts boiling until it gets sticky consistency.
  • Next for making a soft crack free gulab jamun ball, sprinkle a little amount of milk and maida over the dough which we made earlier.
  • Then, gently mix everything for 2 min.
  • As this mixture is a little bit sticky so, grease your palm with oil and make crack free rounded gulab jamun balls.
  • Now for frying gulab jamun balls pour ghee into a pan and melt it in medium flame.
  • When ghee is hot enough, make the flame low.
  • Fry the gulab jamun ball on low flame.
  • Turn them on the other side and fry them on both sides until it becomes golden brown.
  • Then immediately add these hot gulab Jamun balls in warm sugar syrup for approximately 4 to 5 hours.
  • Finally, our homemade gulab jamun recipe is completed, you can garnish it with chopped pistachios and serves this gulab jamun with ice cream.

Notes

Soft Gulab Jamun Recipe Note

  1. In gulab jamun recipe dough must be soft and smooth so never knead the dough which will form gluten in it and makes a very hard gulab jamun ball.
  2. Never fry gulab jamun balls in very hot oil or ghee, either Jamun balls will get plenty of cracks on it and easily disintegrated in oil or becomes brown outside easily without cooking inside.
