Ingredients

  • 3 tbsp oil
  • 300 gm chicken [boneless or bone in]
  • 3 tbsp chopped onions
  • 3 tbsp chopped cabbage
  • 3 tbsp chopped capsicum
  • 2 tbsp chopped carrot
  • 2 tbsp chopped french beans
  • 1 tbsp chopped ginger garlic
  • 1 potato [optional]
  • 1 to 2 tbsp vinegar
  • salt to taste
  • 1 to 2 tsp black pepper powder
  • 500 ml water

Instructions

  • First, for making healthy chicken soup, add 500 ml water, salt, and vinegar to a deep pan and keep them boil for 2 to 3 min.
  • Then, add chicken pieces either boneless or bone-in in this water.
  • Now, cover this pan with a lid and boil the chicken for around 8 to 10 min.
  • Then, separate the boiled chicken and chicken stock for later use.
  • Next, in a bowl shred the boiled chickens and discard the bones from the chicken pieces.
  • Now for, preparing chicken soup heat oil in a kadai and saute ginger garlic on low flame up to 30 to 40 sec.
  • After that add onion, carrot, capsicum, cabbage, and french beans and saute in medium to high flame for up to 2 to 3min.
  • When all vegetables are cooked a little bit add chicken stock in it.
  • Next, add a pinch of salt and black pepper and mix it properly with chicken stock.
  • Now cover the kadai with a lid and make all vegetables simmer for another 7 to 8 min.
  • Finally, add shredded chicken and mix it properly with this healthy soup.
  • For enhancing the flavour of chicken soup you can use sweet corn and vinegar or lemon juice.
  • In the end, garnish the chicken soup with spring onions.
