Ingredients

Lemon rice ingredients

  • 15 cashew
  • 50 grams peanut
  • 2 tablespoon butter
  • 1 teaspoon mustard seed
  • 1 teaspoon urad dal
  • 1 teaspoon chana dal
  • 1/2 tablespoon chopped ginger
  • 1/2 tablespoon chopped garlic
  • 2 chopped green chili
  • 2 dried red chili
  • Pinch of hing
  • 1/2 teaspoon turmeric
  • 200 grams short grain rice or basmati rice
  • 2 teaspoon lemon juice

Instructions

  • At first, for cooking chitranna melt butter in a pan.
  • Now roast peanuts and cashew on medium flame till become golden and crunchy.

  • At first cooking rice for chitranna recipe rinse rice then soak in sufficient water.
  • After that boil water along with a pinch of salt and a dash of oil in a kadai.
  • Next add drained rice, cover the lid and cook rice on medium flame till all the water has been absorbed and rice grains are tender and fluffy.

  • Now heat oil in a pan and spread it evenly.
  • Then saute mustard seed, urad dal, and chana dal in medium flame till dal becomes golden.
  • Furthermore add chopped ginger, garlic, green chili, red chili and saute them for 1 min.
  • Next, add a pinch of hing, turmeric, salt, and dash of water and quickly mix until chana dal and urad dal becomes soft but crunchy.
  • Now add cooled cooked rice on tempering and gently mix without breaking.
  • After that add fried peanuts and cashews on lemon rice.
  • Finally squeeze lemon juice, a pinch of salt on lemon rice or chitranna and cover for 5 minutes to get aromatic flavour.

Notes

Lemon Rice Recipe Note

  1. If you cook rice in pressure cooker then pressure cook for 8 to 10 minutes or for 3 to 4 whistles on medium-high heat. When the pressure settles down on its own in the cooker, then open the lid.
  2. For fluffy lemon rice try to use completely cooled rice on tempering.
