This sweet and sour veg manchow soup recipe is one of the delicious and easy soup recipes in Indo-Chinese cuisine in which fried vegetables are simmered in water vegetable stock with the addition of spicy sauce and topping fried noodles on it.

Ingredients

  • 2 to 3 tbsp oil
  • 3 tbsp chopped spring onion white
  • 1 tbsp finely chopped ginger garlic
  • 3 tbsp chopped cabbage
  • 2 tbsp finely chopped carrot
  • 2 tbsp chopped french beans
  • 3 tbsp finely chopped capsicum
  • 500 ml of water
  • salt to taste
  • 2 tsp red chili sauce
  • 2 tsp soya sauce
  • 2 tsp vinegar
  • 1 tsp black pepper powder
  • 2 tbsp cornflour water mixture
  • 3 to 4 tbsp fried noodles
  • 2 tbsp chopped spring onion for garnish

Instructions

  • First, prepare fried noodles for manchow soup in a small bowl add boiled noodles, cornflour and mix it.
  • Now in a deep bottom pan heat a sufficient amount of oil and fry noodles in medium to high flame until they become crisp and light golden brown,
  • After that take fried noodles out and drain excess oil in kitchen tissue.
  • Now, for preparing spicy veg manchow soup, chopped all the vegetables including spring onions cabbage, carrot, french beans, capsicum, and ginger-garlic.
  • Next heat oil in a deep pan and add chopped ginger-garlic and saute in a medium-low flame until the raw smell goes away.
  • Then, add chopped spring onion and saute in medium flame until they turn translucent.
  • After that fry chopped vegetables including cabbage, french beans, carrot, capsicum in high flame until completely eliminate raw aroma.
  • Next, add a sufficient amount of water, a pinch of salt, and black pepper and mix them well.
  • Now to get a crunchy bite of vegetables cover the pan with a lid and make all veggies simmer for another 5 to 6 min.
  • Furthermore to increase the consistency of manchow soup make cornflour and water mixture add it after 5 to 6 min and mix gently.
  • Also add a few tablespoons of red chili sauce, soy sauce, vinegar and mix it with soup, adjust the quantity as per your taste.
  • Finally, add some fried noodles and chopped spring onions in this soup.
  • In the end, garnish the veg manchow soup with some fried noodles and chopped spring onions at the top.
