The whole manchow soup preparation process divided into two simple steps,
first one is preparing fried noodles,second one is making Veg manchow soup.
so,lets make it now.
Preparing Fried Noodles
1.Take a small bowl add 4 to 5 tbsp boiled noodles.
2.To get crunchy noodles add 1 tbsp cornflour or corn starch.
3.Now mix it with noodles.
4.After that, heat 5 to 6 tbsp oil for shallow fry and 50 to 80 ml oil for deep fry in a heavy bottom pan.
5.When oil is hot add noodles in pan and fry in medium to high flame until they become crisp and light golden brown
6.After that take fried noodles out and drain excess oil in kitchen tissue
Making Veg Manchow Soup
1.For making spicy manchow soup chopped spring onions,cabbage,carrot, french beans, capsicum, and ginger-garlic and heat 3 tbsp oil in a deep pan.
2.Add 1 tbsp chopped ginger-garlic and saute in medium low flame until raw smell goes away.
3.Add 3 tbsp chopped spring onion and saute in medium flame 1 to 2 min until they turn translucent.
4.Also mix 3 tbsp chopped cabbage,capsicum and saute in medium flame 2 to 3 min.
5.Add 2 tbsp chopped carrot and saute another 1 to 2 min.
6.Now mix 2 tbsp chopped french beans.
7.Also add 2 tbsp green peas and cook all veggies in high flame upto 2 to 3 min until completely eliminate raw aroma of vegetables.
8.Next add sufficient amount of water to boil the veggies.
9.Add a 1 tsp salt adjust later.
10.Also mix 1 tsp black pepper powder.
11.Now to get crunchy bite of vegetables cover the pan with lid and make all veggies simmer for another 5 to 6 min.
12.To increase consistency of manchow soup in a small bowl add 2 tbsp cornflour and 5 tbsp water,make a smooth mixture.
13.Next mix cornflour-water mixture in manchow soup and mix it gently.
14.Now mix 2 tsp red chili sauce.
15.Add 2 tsp soy sauce,1 tsp vinegar.
16.Add some fried noodles and mix it with soup.
Note:If you want to increase taste of sourness of soup adjust quantity of sauce as per your taste.
17.At the end add 1 tbsp chopped green chili.
18.Also add 2 tbsp chopped spring onions and mix with manchow soup.At the end,garnish the veg manchow soup with some fried noodles and chopped spring onions at the top.
