how to make moong dal kachori
At first, for making moong dal stuffing for the kachori recipe, pour oil in a kadhai.
Then, add moong dal and saute in low flame until it changes its colour from yellow to slightly brown.
It takes approximately 4 to 6 min, at this stage, you get a beautiful aroma from it.
Now cool down this fried moong dal then pour into a blender with adding a teaspoon of sugar and blend it.
Next transfer this powder moong dal into a large mixing bowl.
After that add some Indian spices to it including coriander powder, cumin powder, red chili powder, and turmeric powder.
Additionally sprinkle salt, amchur powder,garam masala powder, and fennel seed.
Then mix everything with a spoon.
Next, pour a dash of water in intervals and make a stuffing dough for kachoris.
Now for making dough for kachoris add maida, semolina, salt, oil, and a dash of water in a large mixing bowl.
Then pour water little by little and knead thoroughly till soft dough.
Now gently add a tablespoon of oil to the dough and cover it with wet cloths for 30 mins.
Next for making kachori take the oil on your palm and pick a small portion of dough.
Make a circular hollow shape, and press the stuffing down with your fingers.
Now pour mong dal stuffing in it.
After that seal the mouth by bringing the edges together just like making modok or momo.
Then gently flat this stuffing dough by pressing in between palms.
Make a circular puri shape with help of a rolling pin.
Now for frying kachori pour oil into a Kadai, and heat it medium-high flame.
Then add stuffed kachoris in it, and immediately make the flame medium to low.
Fry this kachoris until it becomes crispy, flaky, and slightly golden brown from both sides.
Now take them out from the oil and serve hot with dum aloo or hot and spicy red chutney, sweet and sour tamarind chutney, or green chutney whatever you like.
