Ingredients

Ingredients for paneer tikka

  • 200 grams hung curd or yogurt
  • 250 grams cube cut paneer or indian cottage cheese
  • 1 medium size cube cut capsicum or bell pepper
  • 1 large onion layer separated
  • 3 large size tomatoes cube cut
  • 1/2 tablespoon kashmiri red chilli powder [ for color ]
  • 2 teaspoons red chili powder for heat
  • 1/8 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 2 teaspoon coriander powder
  • 1/2 teaspoon chat masala
  • 1 tablespoon ginger garlic paste
  • Pinch of salt
  • 2 tablespoon roasted gram flour or besan
  • 4 tablespoon mustard oil
  • 2 teaspoon kasuri methi
  • 1/2 teaspoon ajwan
  • 4 tablespoon butter
  • 2 teaspoon lemon juice

  • 2 tablespoon butter
  • 3 green cardamom
  • 3 clove
  • 2 inch cinnamon
  • 2 medium size onion puree or chopped
  • 4 medium size tomatoes puree
  • 1 teaspoon ginger garlic paste
  • 2 chopped green chili
  • 1/8 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon sugar
  • 3 tablespoon coriander leaves
  • 1 tablespoon kasuri methi.

Instructions

  • At first marination for paneer tikka in a large mixing bowl add thick curd or yogurt and whisk it properly such that no lumps forms on curd.
  • Next add kashmiri red chili powder, turmeric powder, Pinch of salt, coriander powder, garam masala powder, chat masala powder, mustard oil, ginger garlic paste, Kasuri methi, ajwain, and roasted besan for proper binding.
  • Now mix everything with a whisker till the marinade becomes smooth and thick.
  • After that add cube-cut capsicum, tomato, and onion to this mixture. Mix everything together.
  • Finally, add paneer cube and gently mix with other ingredients without breaking.
  • At this stage refrigerate this mixture for at least 60 min.
  • Now the first method is to make paneer tikka on a gas stove take out the marination from the freezer then threading each ingredient one by one like capsicum, onion, tomato, and paneer cube.
  • Now on the gas stove and make the flame medium low then hold the skewer either from one end or both ends and gently rotate on the flame.
  • After some time tikka begins chared from the edges and everything cooks properly.
  • Brush some butter or oil at the time of grilling so that it prevents from drying out quickly.
  • In the end don't sprinkle some lemon juice on it, it generates a beautiful aroma.
  • You can use a wire rack then place coated paneer tikka on it and cook both sides.
  • To prepare tawa paneer tikka first heat 2 tablespoons oil in a grill pan , then place cook paneer tikka skewer from both sides till properly cooked.
  • Now for cooking paneer tikka masala gravy heat butter in a pan then saute green cardamom, clove, and cinnamon for 1 min.
  • Next, add onions puree, and cook on medium flame till golden brown.
  • After that add ginger garlic paste, green chili cook, for some time till the raw smell disappears.
  • Then pour tomato puree and cook for 5 min on medium flame till the raw smell of tomatoes disappears.
  • After that add turmeric powder, red chili powder, garam masala powder, salt, and sugar to balance the taste and cook till the oil separates from the masala.
  • Pour water, heavy cream, chopped coriander leaves and kasuri methi into this tikka masala.
  • Finally, add our cooked paneer tikka to this masala gravy. Gently mix all of them on low flame for 2 min.

Notes

Paneer Tikka Masala Recipe Note

  1. If you don't have heavy cream you can use fine cashew paste in gravy. Make suere you soak them in warm water for 30 min before blending.
  2. While marination don't add too much water because binding will not stick properly with tikkas.
