Ingredients

Paneer tikka ingredients

  • 200 grams hung curd or yogurt
  • 250 grams cube cut paneer or indian cottage cheese
  • 1 medium size cube cut capsicum or bell pepper
  • 1 large onion layer separated
  • 3 large size tomatoes cube cut
  • 1/2 tablespoon kashmiri red chilli powder [ for color ]
  • 2 teaspoons red chili powder for heat
  • 1/8 teaspoon turmeric powder
  • 1 teaspoon garam masala powder
  • 2 teaspoon coriander powder
  • 1/2 teaspoon chat masala
  • 1 tablespoon ginger garlic paste
  • Pinch of salt
  • 2 tablespoon roasted gram flour or besan
  • 4 tablespoon mustard oil
  • 2 teaspoon kasuri methi
  • 1/2 teaspoon ajwan
  • 4 tablespoon butter
  • 2 teaspoon lemon juice

For charcoal smoke

  • 1 small charcoal
  • 2 tablespoon ghee
  • 1 small bowl

  • At first marination for tandoori paneer tikka recipe in a large mixing bowl add thick curd or yogurt and whisk it properly such that no lumps forms on curd.
  • Next add kashmiri red chili powder , turmeric powder, Pinch of salt , coriander powder , garam masala powder , chat masala powder.
  • Also add mustard oil, ginger garlic paste, kasuri methi, ajwan, and roasted besan for proper binding.
  • Now mix everything with a whisker till marinade becomes smooth and thick, check the taste of marination if salt or other spices required add it.
  • After that add cube cut capsicum, tomato , onion in this mixture.Mix everything together.
  • Finally add paneer cube and gently mix with other ingredients without breaking.
  • At this stage refrigerate this mixture for at least 60 min.
  • Now first method is to make paneer tikka on gas stove take out the marination from freezer then thrading each ingredients one by one like capsicum , onion , tomato , paneer cube.
  • Now on the gas stove rotate the skewer in medium to low flame.
  • After some time you will see paneer along with other veggies begins chared from the edges and everything cooks properly.
  • Don't forget to brush some butter or oil at the time of grilling so that it prevents from drying out quickly.
  • At the end don't forget to sprinkle some lemon juice on it, it generates a beautiful aroma.
  • Now the second method is to prepare paneer tikka on tawa for this heat oil in a pan.
  • Make the medium to low then place the paneer tikka skewer on pan.
  • Another way to cook paneer tikka at home is remove all the ingredients from skewer and place them on pan.You can try either of these method.
  • Fry the tikkas properly from one side until you get light brown color on paneer and veggies.
  • Rotate other side and cook the tikkas both side until it gets evenly cooked.
  • The third method is making paneer tikka in oven for this preheat the oven at 230 degree celcious or 450 degree farenhite for at least 15 min.
  • Place the tikka skewer on foil covered tray then brush oil on it to avoid drying while in oven.
  • Now place the tikka tray in middle rack and cook the paneer tikka in oven for at least 12 min, make sure turn them paneer to other side after 6 min to cook properly on both side.
  • Finally for char the tikka put the tray on upper rack and broil for at least 2 min. don't over do it your paneer becomes rubbery and chewy.
  • At the end to get smoky flavor in your paneer tikka at home place our cooked paneer tikka in a pan or large tray.
  • Then place a red hot charcoal in a small bowl and place it in the middle of tikka.
  • Next immediately pour ghee on it , it immediately generates smoke.
  • Close the pan or plate with a lid and stay at this condition for at least 10 min until all smokes properly infuse in your paneer tikka.
