Ingredients

Ingredients for potato curry recipe

  • 8 baby potatoes or 4 large potatoes [ 3/4 inch quarter cut ]
  • 1 large size onion [ chopped ]
  • 2 large size tomato [ puree ]
  • 4 tablespoons Oil
  • 1 teaspoon cumin seeds
  • 1 bay leaf
  • 4 cloves
  • 2 dried red chili
  • 1 inch cinnamon
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies [ chopped ]
  • 1 teaspoon kashmiri red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/2 teaspoon coriander powder
  • salt as required
  • 1/2 tablespoons kasuri methi or dry fenugreek leaves [optional ]
  • 3 tablespoons chopped coriander leaves or cilantro [ optional ]

Instructions

  • Preparation for aloo curry
  • At first, for making tasty masala paste for the aloo curry recipe heat oil in a pan and spread it evenly.
  • Now sprinkle cumin seed, clove and bay leaf, dried red chili, and cinnamon then saute them in medium flame till they began to splutter.
  • After that add chopped onions to pan saute the onions in medium to low flame till slightly golden brown and translucent.
  • Next, add ginger garlic paste, and chopped green chilies saute them for 1 min till the raw smell disappears.
  • Now make a puree of 2 large tomatoes or you can use chopped tomatoes and add it now .
  • You can cover and cook the tomatoes properly for 8 to 10 min till the raw smell of tomatoes goes away completely and becomes soft and mushy.
  • At this stage sprinkle kashmiri red chili powder, turmeric powder, coriander powder, and garam masala powder.
  • Add a dash of water and cook this aromatic masala paste for some time on medium to low flame until the mixture gets thickened and becomes smooth and oil starts releasing from the gravy.

  • Now for making potato curry recipe cut potatoes into quarter shape or you can use baby potatoes and add in that mixture.
  • Sprinkle some salt in it and saute this potatoes in this mixture for some time in medium flame.
  • Next pour water in it , mix the potatoes properly.
  • Make the flame medium, cover the lid and cook the potatoes till they become soft.
  • Finally our potato curry recipe is completed check the taste of salt, if required add more.

  1. If you want add more veggies like green peas either fresh or frozen, bell pepper ( fry them in oil first till crunchy ) , boil egg add them when potatoes are almost cooked.
  2. After that simmer them for 3 to 4 min and close the lid till all the aroma circulates properly inside the gravy.
