Roasted Garlic Butter Parmesan Potatoes

Ingredients
- 3 pounds baby red potatoes washed and quartered
- ¼ cup olive oil
- 6 large garlic cloves finely chopped or minced
- 1 tablespoon Italian seasoning
- ¾ cup freshly grated Parmesan cheese
- ½ cup unsalted butter
- Salt and fresh cracked black pepper to taste
- Fresh parsley chopped, for garnish
- ½ cup crispy bacon bits optional
Instructions
1. Preheat the Oven
- Set your oven to 400ºF (200°C) and position a rack at the bottom.
2. Prep the Potatoes
- Wash the baby red potatoes and slice them into quarters.
3. Parboil the Potatoes
- Bring a pot of water to a boil and parboil the potatoes for 5–8 minutes. This will ensure they’re tender on the inside when roasted. Drain and set aside.
4. Mix the Seasoning
- In a large bowl, combine olive oil, garlic, Italian seasoning, salt, pepper, and Parmesan cheese. Stir well. If the Parmesan absorbs too much oil, add a touch more olive oil.
5. Coat the Potatoes
- Toss the parboiled potatoes in the garlic-Parmesan mixture, ensuring they’re evenly coated.
6. Arrange on a Baking Sheet
- Grease a large baking sheet with non-stick spray or olive oil. Arrange the coated potatoes in a single layer, cut side down, for maximum crispiness.
7. Roast the Potatoes
- Roast the potatoes for 25 minutes, flipping them after 15 minutes to brown evenly.
8. Prepare Garlic Butter
- While the potatoes are roasting, melt the butter in the microwave and mix in the chopped parsley.

- Remove the potatoes from the oven and drizzle them with the garlic butter. Add bacon bits if desired, and toss gently to coat.
