Ingredients

Veg Cutlet Ingredients

  • 200 grams of potatoes
  • 1 tbsp chopped ginger-garlic
  • 1 tbsp chopped green chili
  • 2 medium-size chopped onions
  • 2 medium-size grated carrots
  • 1 small grated beetroot
  • 4 tbsp chopped french beans
  • 4 tbsp green peas
  • 3 to 4 tbsp chopped coriander leaves
  • 1/2 tsp salt
  • 1 tsp garam masala powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp amchur powder
  • 100 to 150 grams of maida for the crumb coat
  • 200 to 250 ml water [adjust as per need]
  • 250 grams crushed cornflakes.
  • 200 to 250 ml oil for shallow fry

Instructions

  • At first, prepare stuffing for vegetable cutlet wash potatoes, cut them into smaller shapes then boil them in a pressure cooker for up to 7 to 8 whistle.
  • When potatoes become cool a little bit peel and mash them with
    masher or by hand.
  • Also grate beetroot, carrots and chopped onions, green chilli,ginger-garlic, and coriander leaves.
  • Next, heat oil in a pan, add chopped ginger garlic and saute in medium flame
    until the raw smell disappears.
  • Also, add green chili and chopped onions saute them until onions become slightly golden brown.
  • Now add green peas saute them for a min, and also add grated beetroot, carrots, and chopped french beans. saute all the veggies till it crunchy but not mushy.
  • At this stage add mashed potatoes to it and quick mix it, then sprinkle salt, red chili powder, coriander powder, amchur powder,garam masala powder, chopped coriander leaves, mix them properly.
  • When this stuffing will cool transfer it into the serving bowl.
  • Now for making vegetable cutlet sprinkle some maida or all-purpose flour on it.
  • If you are using crushed cornflakes, powder poha or breadcrumb add now, mix everything.
  • In another bowl make a thick batter of maida water mixture.
  • Now pick a small stuffing to make your desired cutlet shape.
  • Then deep into this thick batter.
  • Immediately transfer them into a coating plate and coat them with crushed cornflakes.
  • Furthermore, gently shake them for removing excess crumbs then keep them on a large plate for frying.
  • Now for frying veg cutlet heat oil in a frying pan.
  • Make sure oil is hot enough then add this coated cutlet one by one and fry in medium to low flame.
  • When both sides of the veg cutlet become golden brown and crispy turn the flame off.
  • Immediately placed this crispy fried vegetable cutlet on kitchen tissue to drain excess oil.

Notes

Vegetable Cutlet Recipe Note

  1. You can also include veggies depending on your choice.
  2. After mixing maida and crushed cornflakes make sure stuffing does not have a lot of moisture in it, otherwise, it soaks lots of oil, sometimes may break while frying.
