how to make fried rice
To make the best vegetable fried rice recipe take good quality basmati rice and wash it thoroughly in running water.
Then soak them for up to 20 to 25 min.
After 20 to 25 min pours water, and a pinch of salt into a deep pot and keep it boiling for a minute.
Then add soaked rice to this hot water and cook on medium flame.
Remember we need grainy rice for fried rice, so cook the rice till al dente.
When the rice achieved its desired state turn off the gas and drain off the rice in a colander.
Now cool this rice completely and set it aside for later use.
Next cook fried rice, pour oil into a pan and spread it evenly on medium flame.
Then add some whole spices including bay leaf, green cardamom, black cardamom, cinnamon, and clove and saute for some time in medium flame.
After that add chopped ginger-garlic and saute on low flame until the raw smell of ginger garlic completely disappears.
Now add chopped capsicum, carrots, french beans, and green peas and saute this mixture in medium flame for up to 3 to 4 min.
Add 1 tbsp chopped green chili and continuously saute the veggies for another 1 to 2 min until veggies are cooked yet retain their crunchiness.
To make an authentic Chinese fried rice recipe add soy sauce, salt, vinegar, and a tsp of sugar to balance the taste.
For making Indian fried rice recipe just discard soy sauce.
Pour some water and mix everything to prepare this sauce.
Now add rice to this sauce and fry the veg fried rice for 2 to 3 min on low flame until all of the sauce is properly mixed with the rice.
To enhances the flavour of fried rice add black pepper powder and nutmeg, mace powder.
Then fluff the rice from one side with a sharp spatula without breaking any rice grains.
Finally, garnish fried rice with chopped spring onions and serve hot with manchurian gravy.
