This indian vegetable soup recipe is one of the delicious quick and healthy veg soup recipe in india, in which fresh vegetables first slowly saute in oil then simmer in water with the addition of salt and black pepper.

  • 3 tbsp oil or butter
  • 1 tbsp chopped ginger-garlic
  • 3 tbsp chopped spring onions [both green and white]
  • 3 tbsp chopped capsicum
  • 3 tbsp chopped cabbage
  • 2 tbsp finely chopped french beans
  • 2 tbsp fresh green peas
  • 2 tbsp chopped carrot
  • 500 ml of water
  • salt to taste
  • 1 tsp black pepper powder
  • 2 tbsp cornflour water mixture
  • 1 tbsp vinegar

  • First, for preparing healthy vegetable soup, rinse all vegetables thoroughly in running water.
  • Then, finely chopped all the vegetables including cabbage, capsicum, carrot, french beans, spring onions and ginger-garlic.
  • Next heat oil or butter in a deep pan and spread it evenly.
  • Now, add chopped ginger and garlic and saute in low flame without burning for up to 45 sec to 1 min.
  • Then, add chopped spring onion and saute in medium flame until it becomes slightly translucent.
  • After that add the remaining chopped vegetables including carrot, capsicum, french beans, green peas
  • Furthermore, saute all these veggies in high flame for up to 2 to 3 min until completely eliminating the raw aroma of all veggies.
  • Next add a sufficient amount of water, salt and black pepper and mix them well.
  • Now cover the kadai with a lid and make all veggies simmer for another 6 to 7 min.
  • While vegetables are cooked, in a small bowl make a cornflour and water mixture.
  • For enhancing the thickness of veg soup add cornflour water mixture and mix with soup.
  • In the end, add vinegar and garnish the vegetable soup with some chopped spring onions.
  • So, we finally prepare Vegetable Soup Recipe, and now serve it hot with noodles.
