Here’s a luxurious, quick, and easy recipe that uses just three ingredients and can be adapted in countless ways!

Ingredients

  • 1½ cups whipping cream (heavy cream or double cream also work well)
  • 12 ounces bittersweet or dark chocolate, chopped
  • 1 tsp instant coffee
  • 1 pinch kosher salt
  • 1 tsp vanilla extract
  • 4 egg yolks
  • 2 tbsp sugar

Instructions

  1. In a medium bowl, combine the chopped chocolate with the instant coffee, salt, and vanilla. Set aside.
  2. In a small saucepan, heat the cream over medium heat until bubbles begin to form around the edges.
  3. Pour the hot cream over the chocolate mixture and let it sit for 5 minutes to melt the chocolate. Then, whisk until smooth and fully combined.
  4. In another bowl, whisk together the egg yolks and sugar until well combined. Add this mixture to the chocolate and cream blend.
  5. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens enough to coat the back of a spoon (about 4 minutes).
  6. Divide the mixture among ramekins or dessert dishes, cover with plastic wrap, and refrigerate until cool and slightly firm, which can take anywhere from 1 to 3 hours depending on the chocolate used.
