Ingredients
- 1 red onion
- 6-8 bone-in, skin-on chicken thighs
- 1-1.5 lbs baby potatoes
- 1 lemon (zest and juice)
- 2 Tbsp olive oil
- 2 Tbsp honey
- 4 cloves garlic, finely chopped
- 1/2 Tbsp fresh thyme leaves
- Sea salt and pepper to taste
- Bunch of thin green asparagus
Instructions
- Slice the red onion and arrange it in a single layer at the bottom of the slow cooker.
- Place chicken thighs on top of the onion layer.
- Wash and halve the baby potatoes, then add them to the slow cooker.
- In a small bowl, combine the zest and juice of 1 lemon, olive oil, honey, thyme, salt, pepper, and garlic. Pour the mixture over the chicken and potatoes.
- Secure the lid and cook on high for 3-4 hours or low for 6-8 hours (based on your schedule).
- About 15-20 minutes before cooking time is up, set the slow cooker to high and place the asparagus on top. Cook until tender.
- (Optional) For crispy skin, remove the chicken thighs 5 minutes before serving, place them on a baking sheet, and broil for 3-5 minutes until golden.
